Take a bite of a chocolate bar. Beside the pleasure it gives, the chocolate leads you on a journey from the cacao bean grown on a far-away plantation to the final designer bar, but also on a more complex voyage through history, society, politics and economics. Throughout its 3000-year history, chocolate has been celebrated as a precious health-giving drink; it was not until the 20th century that sweetened chocolate confectionery and bars replaced ‘real’ chocolate. Today fine chocolate is part of the revival of interest in ‘real’ food. Small artisan chocolatiers and global producers alike are seeking out top quality beans from specific origins. Sarah Jane Evans brings the story of chocolate up to date, and profiles more than 80 of the world’s leading fine chocolate producers, with her tasting notes on selected bars. Chocolate has over 500 chemical compounds that affect its flavour and this book teaches the chocolate lover how to taste, discover and enjoy its many flavours.

Sarah Jane Evans MW is a wine and food writer and broadcaster.
Sarah Jane realized early on that there was something more to chocolate than the sweetshop could provide when she discovered that her father always kept a little pile of silver paper wrapped tablets of dark chocolate in the top left-hand drawer of his desk for a private indulgence. Today there is far more choice and quality in the fine chocolate world for the UK consumer, and Sarah Jane enjoys exploring the byways of the fine chocolate world and writing about them.
As a wine writer, Sarah Jane is interested in the similarities between the production of fine chocolate and fine wine, and between the skills needed to appreciate them both. She is particularly interested in the language used to communicate taste, flavour and texture accurately, without being obscure or pretentious.
Sarah Jane is a Past President of the Guild of Food Writers, and was Associate Editor of BBC Good Food magazine for more than a decade. She currently writes for BBC Good Food, Decanter and Olive, and appears on Great Food Live. She is a General Governor of the British Nutrition Foundation, a Trustee of the André Simon Memorial Fund and a Patron of the Food Chain.
Sarah Jane lives in Dulwich with husband Richard and daughters Consola and Seraphina. (http://www.academyofchocolate.org.uk/)
