This book is about ingredients and what I have seen people here do with them, and it is about the joy that each month brings with its new ingredients. It is about Tuscany, for even though not all of the recipes in the book originate strictly from here, this is what they eat here. Most of the recipes, however, have their roots firmly embedded in Tuscan soil, and year after year, unquestioningly, as the months and ingredients change, so does the family table.
